The chickpea broth is primarily composed of carbohydrates (starch, sugars, and fiber), proteins, and water, during the process of cooking legume seeds, the starches in the seed are gelatinized, setting up conditions which allow for soluble parts of the seed to disperse back out into the cooking water.
Chickpea broth replaces eggs.The broth is collected after the pressure-cooking and sterilization of the legume seed.
